Umm. . . Scones, Jam And Clotted Cream!
There is nothing better on a delicious scone than jam and clotted cream. I love to make homemade scones and eat them warm with a little jam and a lot of cream. It's challenging to find clotted cream in my area. The local grocers don't carry it. Finally, I found a recipe for a clotted cream substitute. For the faux clotted cream
- 1/2 cup heavy whipping cream (cold)
- 1 tablespoon powdered sugar
- 8 ounces cream cheese, room temperature
- In a large bowl, beat the whipped cream with an electric mixer until soft peaks form. Add the sugar and cream cheese, then beat until mixture is combined and fluffy.
- Store covered in the refrigerator for up to 1 week. Serve at room temperature.

We still need to wear our mask, wash our hands, use sanitizers and practice physical distancing. In doing so, stay courteous, professional, friendly and safe. Most of all, practice civility!

We Made it!
What an unbelievable year we had in 2020! From Coronavirus to pandemic, quarantine, unemployment, virtual employment, social distancing and homeschooling. . . many of us have experienced challenges we've never faced before. I would like to offer my deepest sympathies to anyone who lost family, friends or loved ones this year. I also offer my prayers to anyone who suffered in any other hardships due to the pandemic and the uncertain times we've experienced. I offer heartfelt encouragement to everyone to be strong and resilient. Trust God for an amazing 2021! We can do it!
